Development and optimization of a new sparkling wine production method

EASY-FERM will develop an innovative process in the field of fermented and refermented beverages, with particular attention to the production of sparkling wines. The main phases of the project are the design, development and implementation of a system that allows for effective clarification of the product, a critical process that today requires complex filtration operations with high costs and carbon dioxide losses. This process, then, often negatively affects the organoleptic quality of the final product. Easy-ferm's innovative approach aims to reduce or eliminate the need for filtration and centrifugation, offering benefits such as quality improvements, energy and cost savings and greater sustainability.

EASY-FERM aims to overcome the key challenges that the beverage industry currently faces, first of all an increase in product quality and health, while ensuring an efficient and cost-effective process. This innovation could extend to other fermented beverages, such as beers, mead and cider, providing operators in the sector with a tool to improve production and meet consumer demands in terms of quality and environmental sustainability.
EASY-FERM represents an important evolution in the sparkling wine sector because, by reducing filtration and centrifugation operations, it guarantees less oxidation of the product, significantly limits the use of sulphites and allows to obtain a better product from both an organoleptic and health point of view. At the same time, EASY-FERM allows to significantly increase the efficiency of the entire production process.
Easy-ferm will improve the quality and accessibility of sparkling wines through an innovative production process. This will lead to more affordable prices, higher quality products and a positive environmental impact.
