The "MICENE" project is part of Industry 4.0 and the digital transition in the food sector, aiming to automate the process of separating the sheets of dough in traditional Sardinian breads of high quality. Using ICT, IOT and AI technologies, the aim is to reduce manual work and increase the production process, ensuring constant quality, even with flours from ancient grains.
Automation will speed up the separation of the sheets, improving accuracy and reducing errors. Furthermore, the digital transition will enable real-time data collection and analysis, improving management and market adaptability.
MICENE promotes the importance of Industry 4.0 in the food sector, improving competitiveness and sustainability, preserving the authentic characteristics of Sardinian breads and creating new economic opportunities linked to cultural heritage.

The main challenge of the project is to successfully implement automation in the process of separating the sheets of traditional Sardinian breads. This will require the adoption of cutting-edge technologies to optimize the process and manage real-time data, preserving the authentic characteristics of Sardinian breads.
The "MICENE" project is highly innovative as it aims to develop a system capable of separating the bread sheets while preserving the quality of the product. Currently, this process is carried out manually since there is no machine or system suitable for this purpose on the market, which requires a considerable number of operators and affects the efficiency of the process and the competitiveness of companies in the sector. The introduction of the machine for the automatic separation of the sheets would have a significant impact on the competitiveness of companies producing traditional Sardinian breads, allowing them to compete with national companies in which the process is highly automated, as for example in the case of piadina romagnola.
The "MICENE" project aims to ensure efficiency and consistent quality for the consumer, regardless of the variability of raw materials. It promotes agricultural sustainability, resource saving and stimulates innovation, also contributing to the awareness of local cultural heritage. In short, MICENE combines technological innovation, sustainability and preservation of traditions for a positive impact on people's lives.
