The NUTRI.AGE project aims to create synergies between companies and academic research to develop solutions for the silver economy and elderly health. It focuses on creating digitally monitored processes and products, with the goal of testing the applicability of probiotic strains associated with bioactive peptides and ''green'' solutions through in vivo trials. 

SYNBALANCE specialized in fermentation and probiotic formulation, will collaborate with COSTANTINO & C. S.p.A to select biomasses, the preparation of bioactive ingredients aimed at optimizing the effectiveness of probiotic strains and the safety assessment of bioactive ingredients. PHOIBOS, the third partner, will apply electronic and information technologies to create innovative control system and measurements and implement analysis and data collection algorithms in various experimental contexts.

The approach aims to enhance natural resources by recycling waste and using organic plant sources to produce bioactive ingredients, contributing to CO2 emissions reduction through the digital optimization of processes. The research focuses on creating ingredients and food products to counteract senile fragility, using agricultural by-products and digitally controlled fermentation processes.

The project aims to develop new technological approaches based on the use of information technologies, conducting research and innovation activities to generate knowledge and solutions to be validated on a pilot scale for industrialization. Process optimization will allow reaching high levels of technological maturity and scaling up production. Digital technologies will enable real-time monitoring and automation of processes, reducing errors and costs.
